"Scheibletten" is the brand name of a processed cheese product from the American company Kraft. In 1956 they were developed and sold as "Kraft Scheibletten", the current trademark rights have belonged to the American food manufacturer Mondelez since 2012. Processed cheese was originally developed in Switzerland around 1911 to make cheese less sensitive to temperature and to enable it to be exported to warm countries. Processed cheese must contain at least 50 percent cheese in the dry matter. It is manufactured industrially with the help of melting salts from grated cheese. Melting salts include salts of phosphoric acid, lactic acid and citric acid. The cheese is mixed with the melting salts and heated. The reaction of the protein with the melting salts causes the protein to swell and thus to absorb water. This is how the processed cheese gets its special consistency. The cheese mass is then pressed into molds and cooled.

Use: discs

Slices can be prepared and enjoyed in different ways. Cold as cold cuts on bread or straight. Thanks to their melting properties, they are ideal for gratinating and topping food. They can also be used to refine dishes and sauces. Children like Scheibletten because of their mild taste, but this also goes well with spicy foods.

Storage: discs

Slices are individually sliced ​​in plastic and should be stored in a cool and dark place, but they don't necessarily need to be in the refrigerator. Due to their processing, they have a longer shelf life. Once opened, slices should be stored in the refrigerator like other dairy products and consumed quickly.

Scheibletten - history

Scheibletten can be found in every grocery store. They are mostly sold as small, foil-wrapped, rectangular slices that are convenient to use and eat. The cheese is offered in different cheese flavors and depending on the flavor, the cheese takes on a light to strong yellow color. The first time that processed cheese was produced was in 1911 by the managing director of Gerberkäse AG, Walter Gerber. In 1956, the first Scheibletten cheese from the Kraft company came onto the German market and can still be found in every supermarket today. The cheese was and is mainly used in hamburgers and for gratinating dishes.

Manufacture of discs

So-called melting salts play a major role in the production of slices. These improve the emulsification of protein and ensure, among other things, that the protein binds with the fat so well that no fat or water can settle or escape in the end product. In Germany, only calcium, potassium and sodium salts, made from lactic acid and lemon as well as phosphoric acid, are permitted in food processing.

In order to make slices, cheese is first finely grated. The grated cheese is next mixed with the water and the melting salts. Of course, other flavors and spices are also added in this step so that the slices get their characteristic taste afterwards. The mass is then heated until it begins to liquefy. Once this has happened, the liquid disc mass is filled into molds and cooled there again until it solidifies again. The end product can now be released from the mold and packaged. This is how every disc is made.

Scheibletten - varieties

Discs are available in many different types. There are, for example, Scheibletten that have a variety name, such as Edamer or Gouda. These are made from only one type of cheese and can therefore also bear its name. The slices, which do not have such a name, are mostly made from different types of cheese and are therefore not single-origin. Also very popular are slices that have a smoke aroma and where the cheese was smoked. Other varieties are with pieces of ham, with chilli and with herbs. There are also many other variants on the market.

Melting salts

The melting salts contained in Scheibletten were declared dangerous and unhealthy a few years ago, as phosphoric acid in particular is said to be unhealthy for the body in large quantities. However, disc tablets only contain small amounts which are absolutely not harmful to health with a healthy diet and in normal amounts. Discs should not be eaten in large quantities by small children and dialysis patients, as the melting salts could have a negative effect on their intestinal flora. However, if you eat healthy food and enjoy it in moderation, you can eat Scheibletten without hesitation.
